I like having biscotti with lattes but at a lot of coffee shops they come in individually wrapped plastic packaging. They’re also kind of pricey considering you only get one. So I decided I’d try to make them myself. Here are the ingredients I used:
- 2 cups all purpose flour
- 3/4 cups whole wheat flour
- 1 1/2 cups brown sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 3 eggs
- 6 tbsp butter, melted
- 1 cup hazelnuts
Sift together the flour, sugar, baking powder and salt. Make a well in the center and add the eggs.
Mix the eggs into the flour mixture along with the melted butter.
Chop the hazelnuts. Add the hazelnuts to the dough, turn out onto a floured surface and separate into three pieces.
Roll each piece into a 12 – 14 inch log.
Put the logs on a baking sheet and flatten with your palm.
Bake for 25 to 30 minutes at 325 degrees. You want the dough logs to be firm and a little browned. You’ll probably want to use two cookie sheets to bake them, seeing what happened to mine:
Let the logs cool for 15 minutes on the tray. Put them on a cutting board, and using a serrated knife, cut into slices.
Put the slices on baking sheets and bake for ten minutes.
Flip the slices and bake for ten more minutes, or until golden, crispy and dry.
Now go get a latte, dip biscotti in it and enjoy. If I had any homemade nutella right now, I would spread some of that on them too.
