I’ve been dealing with a lot of stuff recently and so I haven’t been posting. But I’m back now and hopefully I won’t stop for that long again. That said, I made potato gnocchi. Gnocchi come in plastic packaging so I make them from scratch. I never liked store bought gnocchi that much but I really love these homemade ones. These are pretty simple to make and they taste awesome. Here’s how to make them.
- 1 1/2 pounds potatoes (I’ve used yellow, red, purple and russet and they all work well. I buy loose potatoes instead of the ones on plastic bags.)
- 1 1/2 cups flour (I bought this in a paper bag)
- 1/4 tsp salt (I bought this in bulk. It’s actually Himalayan pink salt.)
Scrub the potatoes and boil them for half an hour or until tender.
Drain and peel the potatoes. Return them to the pot and mash them.
Add the flour. Mix until you have a dough.
Take off small pieces, flatten them into discs and indent them with your thumb. There are a lot of different shapes you can make but this is just how I do it.
Put them on a floured surface until you’re ready to cook them. Flour is important otherwise they will all stick and you will have to start over shaping the dough.
Bring a pot of water to a boil. Add the gnocchi. They will float when done. It takes a couple minutes.
Serve with the sauce of your choice. I put mushroom cream sauce on this time but I usually put on homemade pesto.
